Chiapas Mexico, a narrow strip of land wedged between the border of Guatemala, the Sierra Madre de Chiapas Mts. and the Pacific Ocean. With abundant moisture and rich volcanic soil, the region is ideal for coffee growing. Back in the 1890s, German descendants migrated and through deceit and entrapment commingled with the indigenous peoples of the region, taking advantage of the region’s agriculture. Now known as Chiapas farmers, through laborious tradition, distinguished their harvesting practices by hand-picking their coffee cherries. Still practiced today, the Chiapas farmers spread their coffee cherries on parchment to be dry-milled, sorted for quality and prepared for export. Expect a medium-bodied coffee with Notes of Milk Chocolate, Nougat, Roasted Almond, Citrus, a heavy aroma and a mild acidity.
